I think you are on the right path with getting the adhesive. I plan to use some of it on a 1/48 scale Monogram B-29. It is planned for the Korean War group build and it would break the bank trying to use numerous packages of "Bare Metal Foil" in order to cover it. From what I have read about using household foil to cover models, is to use the thinnest, least expensive type of foil you can find. It is supposed to work the best as it allows the surface details to be telegraphed through to the outer surface of the foil. Also by using the adhesive, you can flip the foil over and use the less shiny side too. This will allow you to make variations in different panels should you want to.

I had a very hard time trying to cover the cowling using foil on mine.

One thing I did discover about Japanese aircraft that were bare metal... On the Nakajima built Ki-44, the individual panels all look to be the same color and have a very similar reflectivity. On Kawasaki Ki-61 and Ki-100 planes, the outer skin panels have a different reflectivity, such as you would expect to see on an American built plane.

As far as masking over foil... I would highly recommend that you paint the wing bandages, anti glare panels and such before you add the foil. Foil can be easily lifted when you remove the tape from the surface. If this happens, simply press it back in place. If you do have to mask foil, I would recommend using something with a low tack adhesive, similar to that which is found on "post it" notes.
